Our cacao grows on a single family farm in the mountainous jungle of Cusco, Peru — where cloud forest meets the Andes, and cacao trees have grown wild for generations. We work with Chuncho, one of the world's oldest and most prized cacao varieties. Native to Cusco and its own distinct genetic cluster, its lineage dates back over 2,000 years, and it's the same cacao the Incas once ate. Thriving only in this specific high-altitude Amazon environment, Chuncho develops a bold, fruity, floral flavor with high fat content and almost no bitterness.
The same family also handles all post-harvest processing, with the same care as the growing itself — preserving flavor and nutrients at every step. The beans are dried in partial shade, fermented carefully up to 40°C for a rich cacao flavor without losing Chuncho's unique nuances, and roasted only briefly to bring out the best flavors intact.
Our cacao paste is ceremonial grade, crafted with care so its original character and energy stay intact from jungle to cup. No sugar, no additives — nothing but cacao.
